Preparation:

VITICULTURE: Traditional trellis. (wire-trained wines)
First plot wine with D.O. from Bodega El lomo and the municipality of Tegueste. The origin is in a unique plot nicknamed "Los Laureles" located on the slope of the Tegueste Valley at an altitude of 600m above sea level northeast of the island. The soil is clayey and therefore one of the oldest of our "young island." The strains of the varietal varieties that make up the vineyard, are the result of the selection that more than 80 years ago was carried out by the family that owns the plot, of Basque origin but great lovers of Canarian wine and its varieties. The harvest is 100% manual. The grapes are transported to the winery in boxes of 20kg and the second selection is carried out in tape before their passage. The elaboration process begins with the reception of the grapes refrigerated in the chamber between -5ºC and 0ºC, thus avoiding oxidation. The varieties make the pre-fermentative maceration at 0ºC and then start to ferment in a stainless steel tank at a controlled temperature between 25-27ºC for 10-12 days. Then they go to 500-litre French oak barrels where they will age for 6 months. Subsequently, it is bottled, unfiltered and stored for another 6 months. All our wines have a series of characteristics in their preparation that make them unique: Use of indigenous yeasts in the fermentation process; minimal addition of sulphites and Vegan V-label seal that accredits the non-use of products of animal origin at any stage of the process.

TASTING NOTE:

Clean and bright, ruby red colour with medium/high layer. On the nose it is complex and greedy, the aromas of ripe red fruits stand out, its minerality complemented with lactic notes on a fine spicy and balsamic background with subtle smoky touches typical of the Listán varieties. Balanced, wide and creamy. Enjoy good acidity in its route and with bound and soft tannins.

RECOMMENDATIONS:

Serve between 16-18ºC. Accompany with smoked and cured cheeses, appropriate for grilled meats, stews of both meat and fish. It marries excellently with spicy El Lomo dishes and with a good part of the traditional Canarian, Castellana and Chinfa cuisine.
