Preparation:

VITICULTURE: Traditional trellis. (wire-trained wines).

Vinification:

The whole bunches are refrigerated until they reach a temperature below 4ºC to then pass to their pressing and thus obtain the must as clean as possible, avoiding any colour transfer of the skins and seeds. Once we have that clean must, fermentation starts in stainless steel tanks at a controlled temperature for about 6 to 8 days and then, when it reaches the desired density, we proceed to interrupt the fermentation by cold, drastically lowering the temperature of the must to 0º Celsius with the aim of inactivating the complete fermentation cycle and obtaining a delicate semi-sweet wine.

TASTING NOTE:

Clean pale yellow crystalline colour, with faint gray reflections.

Its aroma gives off notes of white fruits and stone that give way to a floral and citrus aroma, surrounded by a background of honey.

In the mouth it is fruity, creamy and fresh, manages to transmit a great wealth of sensations. Pair with appetisers, seafood, fish and rice and also desserts.

RECOMMENDATIONS:

Serve between 12-140C. Accompany with appetisers, smoked cheeses, seafood, fish and rice and also desserts.
