Preparation:

The Canary Islands have historically been highlighted for the remarkable quality of its white varieties, with the famous "Canary" at the head originally from the ancestral strains of Tenerife malvasia. The exponential, relatively modern development of Canarian viticulture in hand with the knowledge of our native grape varieties, many of them unique in the world* has hatched in the irruption of our wines in the world oenological panorama as one of the great surprises with a potential still difficult to measure.

"4 Lías" joins the panorama of great wines from "noble" or high quality white strains originating from the Canary Islands, along with Malvasía, Albillo Criollo, Forastera Gomera, to give rise to wines of marked aroma, great palate and balance, which are characterised by a light floral perfume not too defended, but very delicate, marked minerality and a unctuous flavour, rich in fast nuances. Within the current efforts to return to the traditional varietal framework, the White Listán begins to develop its potential to participate again in the elaboration of the great Canarian wines, thanks to the efforts carried out by the different winemakers of the archipelago and for their incessant search for those unique elements that allow it to unfold all its expressiveness. The commitment to a great white Listán from vineyards at altitudes above 850m S.N.M. makes us rethink the possibility of innovating and exploring an elaboration that combines the extraction of the potential of this heiress of the Fine Palomino de Jerez with our philosophy of innovating from the respect for our traditions. This is the origin of the first white wine on lees that is made in Bodega El Lomo.

The lees, co-protagonists of this wine, come from a very special vineyard: located in the shelter of a volcanic caldera in the region of Tacoronte and its good geographical and climatic conditions, it is decided to "build" a vineyard that houses an exceptional representation of four varietals that oenologically we consider absolutely extraordinary and differentials: Gual; Albillo criollo from La Palma; Vijariego blanco, Blanco Baboso and Verdello (Vara from El Hierro). Of the "4 Lees" we can highlight a differential character, straw yellow with golden nuances produced by the work on lees and its aroma of ripe fruits. Harmonious, voluminous and long, it offers a good balance between body and natural acidity.

TASTING NOTE:

Clean and shiny, straw yellow colour with golden trims. In the nose it is complex, ripe stone fruits (plum and peach) stand out, with notes of pastry provided by the lees, and also nuances of white flowers and balsamic vegetables typical of the growing environment (fennel). Fresh and very powerful mouth, with clear mineral character provided by the volcanic soils, balanced taste, greedy, and endowed with a great length and personality, which ends with a great aromatic amplitude

RECOMMENDATIONS:

Serve between 16-180C. Accompany with pasta, smoked and cured cheeses, tollos, teguestero marinade, old clothes, goat meat, rabbit in salmorejo, meat or fish in marinade.
