ELABORATION:

Manual harvest with double selection of the bunches at the optimum point of maturity. The grapes enter the tank and go crio-maceration for 6 to 10 hours, then perform a gentle pressing to obtain the must that will be settling and that will later slowly ferment at a temperature of approximately 16 Cº. After several rackings sheltered from the air is bottled.

TASTING NOTES:

Straw yellow colour with greenish edges, very clean and bright.
On the nose it is fresh, with aromas of tropical fruits, citrus and a background of white flowers.
On the palate it is fresh, silky, with a soft mid palate and good persistence at the end.

PAIRING SUGGESTIONS:

Serve between 8-10oC. Accompany with fish, seafood, Canary Zancocho, lapas with canary mojo and fresh goat cheeses.

ELABORATION:

Qori (Gold in the Quechua language) refers to the enormous legacy that makes up the exchange between the Hispanic culture and more specifically the starting point of the Canary Islands with the Ibero-American culture. This name inspires one of the most select elaborations of Bodegas El Lomo. It all begins with the reception of the grapes in chambers at 5ºC to prevent oxidation. We start the fermentation with the skins and subsequent maceration for 12 days. Spontaneous clarification on its own lees while it rests in stainless steel tanks. This is how we obtain a delicate varietal white wine that, after resting for 6 months in the bottle, reaches the expressiveness contained in the coupage of Canarian varietals that make it up.

TASTING NOTES:

Straw-gold color, medium robe and slow tear.
On the nose it is intense, complex and sweet, the aromas of fruit stand out
ripe white and jasmine complemented with lactic notes on a fine
saline and balsamic background with subtle smoky touches.
On the palate it is Balanced, wide and unctuous mid palate. Enjoy good acidity in its journey and with rounded and soft tannins. Persistent, in the bottle It augurs a very positive maturation.

PAIRING SUGGESTIONS:

Serve between 12-14ºC. Accompany with smoked and cured cheeses, fish and seafood and Japanese gastronomy (Sushi) and Nikkei and Chifa cuisine.
